Tomato Pie

This recipe lends itself to estimates. Handfuls of this, handfuls of that. I measured, but you could eyeball it and it would still work out. Feel free to change the cheeses around, play with the spices. I made a homemade pie crust, but for this recipe a good quality prepared crust would work fine. Peach Bruschetta with Ricotta and Prosciutto

Both the bread and the peaches are grilled on a panini press, so this appetizer comes together quickly. It offers a nice balance of flavors and textures—crunchy bread, sweet peaches, creamy ricotta cheese, mildly salty prosciutto and peppery arugula. Ingredients: 1/3 cup balsamic vinegar 4 slices country-style bread, each about 1/2 inch thick 1/3 cup olive oil, plus more for drizzling 2 large peaches, pitted and each cut into 12 slices 6 Tbs. ricotta cheese, […]

Pita Bread w/Seasonal Garden Veggies

These soft pitas are made with a combination of white whole wheat flour, and bread flour. The whole wheat gives them a lightly nutty taste, and golden color; the bread flour helps them “pop” in the oven.   pita 1 3/4 cups King Arthur Organic 100% White Whole Wheat Flour 1 1/2 cups King Arthur Unbleached Bread Flour 1 1/2 teaspoons salt 1 1/2 teaspoons instant yeast 1 to 1 1/8 cups lukewarm water* 2 tablespoons orange juice […]

Sunburst Lemon Bars

Spring demands lemon bars, those tart, portable treats perfect for a picnic or evening tea on the terrace. Sadly, too many lemon bars are, to borrow a term from Cher (the one from Clueless, of course), “Monets”: alluring from afar, but a “big old mess” once you get close. Even more disturbing, many lemon bars are (again like Monets) more expensive than they should be. Bright yellow and shiny, flaws hidden by a fine layer […]

National Pi Day! Post your recipes…..

Just a reminder that  March 14 Pi Day!  Every year I look forward to Pi Day.  I always know it is the day when suddenly, I open up my feed reader and see pies, pies everywhere because everyone else remembered. You will want to mark your calenders so you will not forget.  Yep, I’m weird like that, if I don’t mark it down I tend to forget it. For those who still have no idea […]
